The fourth annual London Pizza Festival takes place in Borough Market, Southwark on Sunday, 20th May 2018.
800 pizza lovers will descend on London’s oldest food market to sample 6 quarter-pizza slices – one from each pizza company at the festival. They’ll also compare and rate each slice in the ultimate pizza bake-off.
There are some big names involved so the competition will be fierce. On the day, the guests will sample a different signature pizza from each pizzeria listed below.
The Perfectionists’ Café
Heston Blumenthal’s The Perfectionists’ Café is based at Heathrow airport, so now’s your chance to try a Michelin-starred, wood-fired Neapolitan-inspired pizza without having to clear airport security.
Wandercrust
Usually served from their black pizza van, Wandercrust serve Neapolitan pizza made using water, salt, fresh yeast and a blend of flours in their dough before letting it rest for 30 hours at room temperature.
Santa Maria Pizzeria
Often near the top of any list of London’s best pizza places, Santa Maria Pizzeria are making their first London Festival appearance in 2018 serving their authentic Neapolitan pizza.
Hai Cenato
Jason Atherton’s Hai Cenato serve classic and inventive pizzas with an airy sourdough base. Giles Coren described a pizza bianca there as the best pizza he’d ever had.
Mother
David Biffani uses sourdough made from sea water, in Mother, based at Battersea Power Station. Mother was originally one of Denmark’s most popular pizzerias based in Copenhagen, before opening in London last year.
‘O ver
‘O ver are another pizzeria using sea water as a secret ingredient, and were one of the first in the UK to do so. Pizza chef, Marino Bove, is a protégé of Neapolitan pizza masters Enzo Coccia and Guglielmo Vuolo.
